Happy Independence Day!
The 4th of July has long been my favorite holiday. I am so grateful for the United States and the freedoms we enjoy here. My childhood is full of wonderful memories of swim parties, bbq potlucks, laying out under the stars with dear friends waiting for the fireworks to start, and sweating because it was July in Arizona and 108 degrees. It is also the day my husband asked me to marry him eight years ago!
The holiday looks a little different now with kids. The sun doesn’t set in where we live in the Midwest until nearly 10 so fireworks are quite late; as a result, our children have seen them only a handful of times. Our little town also has a parade on the 3rd of July, which we watch each year from the front yard of our friend’s historic home downtown. Our town is so small that half of the town is in the parade and the other half watches it!
Some things never change, like making and serving my mom’s famous “American Flag Cheesecake.” The cream cheese is softening on the counter top as I type these words! I’m making Hawaiian Pork Fajitas with Pineapple Slaw + Coconut Rice for lunch and prepping a white bean and radish salad to take to the potluck at a friend’s farm tonight.
